Italian Sausage and Tortellini Soup
Ingredients
- 1lb bulk mild Italian sausage
- 1medium onion, chopped
- 2medium carrots, chopped
- 3cloves garlic, finely chopped
- 2cartons (32 oz each) Progresso™ chicken broth
- 1package (9 oz) refrigerated fresh cheese tortellini
- 1bag (5 oz) baby spinach
Steps
1 In 5-quart Dutch oven, cook sausage, onion, carrots and garlic over medium heat 8 to 10 minutes, stirring occasionally, until sausage is thoroughly cooked; drain.
2 Stir in broth; heat to boiling over medium-high heat. Add tortellini; reduce heat to low and cook 8 to 12 minutes or until tortellini are tender. Stir in spinach and cook 1 to 2 minutes or until spinach is wilted.
